Fresh calamari are excellent molluscs to cook in a pan, with the addition of greens and vegetables, which make this dish complete and very nutritious.

You can propose the following recipe, both with the family as a second fish dish, and for a dinner with friends, accompanying it with good white wine with fruity flavors.

Fish in general is a nutritious and indispensable food for our health, to be included in the weekly diet at least twice, recommended by nutrition experts.

If you want to vary the recipe, you can replace the vegetables with other vegetables of your choice.

How to prepare calamari and zucchini pasta

Start by cleaning the squid, rinse them, cut them into rings and keep them aside (1). Wash and trim the courgettes, cut them into small pieces (2) then set them aside. Brown the garlic in a pan with extra virgin olive oil, add the squid and sauté for a few seconds over high heat (3). Lift them from the pan, remove the garlic and deglaze, i.e. dilute, the cooking juices with the white wine.

Add the courgettes (4) and the halved cherry tomatoes and cook for about 5 minutes over medium heat, stirring occasionally. Add the squid again, add salt, pepper and leave to flavor for a minute. Sprinkle with chopped parsley and turn off the heat. Cook the tagliatelle in plenty of boiling salted water (5), drain and put them in a pan with the sauce. Jump to mix and flavor everything. Your calamari and zucchini pasta is ready to be served with a drizzle of oil and chopped parsley (6).


When you want to prepare the pasta with squid and shrimp, first clean the squid: rinse them well under running water, then take the head with one hand and the body with the other.

Remove the beak and eyes from the head. Cut the squid bodies into rounds, leave the heads whole.

Heat a round of extra virgin olive oil in a pan, perfume the oil with the garlic clove and the chopped chilli pepper, add the squid to the pan. Let them brown well. As soon as the squid have browned, blend them with the white wine and let all the alcoholic part evaporate completely over high heat.

When the alcoholic part of the white wine has completely evaporated, add the tomato puree and, let it cook for about 35-40 minutes during cooking, add a little water at a time, in order to keep the sauce always moist, avoiding to allow it to dry too much

Bring the water to a boil in a large pot, once it has reached a boil, add salt and put the pasta to boil.

After the cooking time of the squid, add the prawns, previously set aside and cook for no more than 5 minutes. season with salt

Bring the pasta al dente, then drain it directly into the pan with the sauce, mix, mix and season well with chopped parsley.

Serve the pasta with squid and prawns, with chopped fresh parsley.
