If we are still in the nettle season, I said to prepare a soup for my mother because she likes it a lot. So if you want an idea of nettle soup and you like my recipe, you can try it!
- 1 bowl of nettles
- 1 onion
- 1 carrot
- 1/2 red pepper
- 100 gr peeled tomatoes
- 2 tablespoons homemade tomato paste
- 3 tablespoons oil
- 1 cup small rice
- 1 tablespoon full of vegetables
- sour borscht
Preparation time: less than 60 minutes
RECIPE PREPARATION Nettle soup with rice:
We clean the nettles from any dirt, then we wash them well under running water and drain them.
We clean the onion and chop it, we clean the carrot and put it on the large grater.
We cut the red pepper into cubes, as well as the peeled tomatoes.
Heat the oil in a pot, add the chopped vegetables, apart from nettles, 3-4 tablespoons of water and simmer for 3-4 minutes.
Pour the water and when it starts to boil, add the chopped vegetables and green parsley.
Let it boil a little, turn on the nettles, sprinkle with salt and pepper.
We wash the rice in two waters, when the vegetables are more than half penetrated, we let it go in the soup.
Mix well, taste a few berries when we think it is cooked, then add the tomato paste and borscht that we boil before, according to taste.
Let it boil for a few more minutes and close the stove.
