Mexican Burrito Ingredients

For the test:

  1. Corn flour 3 cups

Cooking Mexican Burritos:

Step 1: knead the dough for the tortillas.

In the dishes for future dough, sift corn flour through a sieve, put salt, soda and butter. While stirring with a spoon, pour a glass of hot water and knead the dough with your hands, until it becomes elastic. Once kneaded - cover with a kitchen towel and set it aside. Across 15-20 minutes it's time to make cakes. To do this, lightly sprinkle flour on the board (where we will roll the dough), separate the lump from the dough itself (approximately like with a chicken egg) and roll this lump with a rolling pin to a thickness of 2-3 mm. Once rolled out - immediately place the sheet into a preheated dry pan. Fry until golden spots appear on both sides. Lubricate the finished cake with butter and put it on a flat plate. Then, all over again: rolled out, fried, greased, put off. And so on until the dough ends. Important: immediately after being rolled out - fry and grease with butter. Otherwise, the cake itself dries quickly. A plate with ready-made tortillas is covered with a towel and set aside for now.

Step 2: prepare the filling.

Wash the chicken breast thoroughly under running water and cut it into small cubes (approximately 2x2 cm) on a cutting board. Peel the onion and chop it as finely as possible. The finer we can cut, the better for the dish. Peel and chop the garlic through a fine grater. We put the pan on the fire, pour a little vegetable oil into it and wait until it is hot. Then put chicken and onion in it, salt and season with spices. Fry until golden brown, occasionally stirring with a spatula so as not to burn.

Step 3: Cook the corn paste.

While the chicken breast with onions is fried, we will prepare corn paste. To do this, open a jar of corn and transfer it with the liquid to a blender, where we grind it as much as possible. Then, pour the crushed mixture into the pan, add half the milk (about 100 ml), butter and flour. Mix everything thoroughly with a spoon and boil the resulting mass over medium heat. As a result, it will become much thicker. Do not forget to stir occasionally. When the pasta is ready, we shift one third of it into a separate bowl. The remaining 2/3 of the pasta is added together with the chopped garlic to the chicken, which by this time should already be golden in color. Thoroughly mix everything that is inside the pan, cover with a lid and stew still 3-4 minutes.

Step 4: turn the burrito.

This is the most crucial step in the cooking process, but first turn on the oven (set the temperature to 200 degrees), grease a baking sheet with butter, and also grate cheese on a medium grater. Now we wrap a burrito. On the finished cake, namely on its right half, lay out 1-1.5 tablespoons of the filling from the pan and carefully wrap it on three sides so that it turns out as in the photo. Thus, we wrap all the cakes. Put the finished burritos on a greased baking sheet. Top up the remaining milk in 1/3 of the corn paste and grease the cakes on the baking sheet with it. Sprinkle with grated cheese on top and send the baking sheet to the oven, where we bake minutes 8-10 at a temperature at 200 degrees.

Step 5: serve to the table.

We transfer the finished burritos to plates, decorate with sour cream and herbs. We serve to the table. Enjoy your meal!

Recipe Tips:

- - Any hard cheese is suitable.

- - in the process of frying the cakes, a situation may arise when bubbles themselves begin to appear on them. In this case, just squeeze the bubbles with a spatula.

- - You can also take wheat flour for the dough. Preferably top grade.
