Cooking potato zrazy with mushrooms:

Step 1: prepare the ingredients.

We load the raw potatoes of medium size, and wash them under running water. Then, with a knife, thinly cut the skin from it and rinse again, you should get 1 kilogram of peeled potatoes. If you purchased, large potatoes should be cut into 3-4 parts, if your medium-sized potatoes can not be cut. We put the tubers prepared for cooking in a deep enameled pan and fill it with running water, so that it would be two fingers above the level of raw potatoes. Turn on the stove to a strong level and put a pan on it. After the water has boiled, put 2 leaves of laurel in it and screw the plate to the middle level. Estimated Potato Cooking Time 20 - 25 minutes. Per 5 minutes until the end of cooking we salt to taste the water in which our potatoes are cooked, the main thing is not to put a lot of salt! In order to check the readiness of the potatoes, take a fork and insert it into the tuber pulp. If the prongs of the fork enter easily, then the potatoes are ready, if they enter hard, it’s worth boiling. This is an important ingredient for us. 5 to 7 minutes until ready. While boiling potatoes, prepare the mushrooms. Take 200 grams mushrooms, wash them under running water, lay on a cutting board and cut off a small piece of a leg with a knife in the place where the root processes were. It’s not necessary to cut off the whole leg; it is completely edible. Then we cut the mushrooms with a knife into arbitrary small pieces or small halves. Do not cut mushrooms large, as large pieces will not be well stewed. Put chopped champignons on a plate. Take 1 onion, we clean it from the peel, wash it under running water and on a cutting board with a knife we ​​cut it into a small cube. The approximate diameter of the cube 5 by 5 mm. Put chopped onions on a plate.

Step 2: prepare minced mushrooms.

Cooked potatoes, mushrooms and onions prepared for further processing, it is time to make minced meat for zrazy. On a stove included, put a frying pan on a strong level and pour into it 50 grams vegetable oil. After the oil in the pan is heated and this will happen in about 1 minute we put onion chopped into small cubes on its bottom, and fry it until golden. Add finely chopped mushrooms to the golden onions, do not forget to periodically mix the mushrooms and onions with a wooden spatula so that they do not burn. Fry these two ingredients together for 2-3 minutes. After this time, pour into the pan 100g clean distilled water so that the mushrooms and onions are slightly stewed. After all the water in the pan has evaporated, transfer the onions with mushrooms using a wooden spatula into a blender and grind at medium speed for 1 - 2 minutes to a shallow consistency. Mushroom stuffing put in a deep bowl with a wooden spatula. Add a little salt to taste and mix with a wooden spatula, not forgetting that the potatoes also salted during cooking. Ready mushroom mince is temporarily set aside.

Step 3: prepare the potato mass.

While we were preparing all the other ingredients, the potatoes were already boiled. Remove the pan from the stove and carefully drain all the water from it. Take a potato crusher and mash it right in the pan. After the boiled potatoes are fully mashed, add 1 chicken egg and black ham pepper to taste. We continue to rub the mass with a pusher, raising the pusher up and down, thus, a chicken egg is driven into the mass from potatoes. When the egg is completely mixed with mashed potatoes, add to them 50 grams pure sifted wheat flour. Carefully right in the pan, using a tablespoon, mix the flour into mashed potatoes until a homogeneous consistency. The result was a mass similar to potato dough. Such a dough should be very thick; when forming a ball, the pieces of potato should not break up. Before proceeding to the next steps, taste a small amount of potato mass, and if necessary, salt it.

Step 4: forming zrazy.

Correct formation of zraz is a very important process. Real potato zrazy are never made round, they should be oblong in shape, with slightly pointed ends and flattened on both sides. Pour on the cutting table 50 grams sifted wheat flour, a little hand spray it on that section of the table on which zrazy will be formed. Take 2 tablespoons with a slide of potato mass. We form a ball from it and put it on a cutting table on top of flour. The potato ball is easily crushed with a hand from all sides, thus making a small cake. The diameter of the pellet is about 12 centimeters pellet thickness 6-7 millimeters. In the middle of the tortilla we put the mushroom stuffing, 1 teaspoon with a slide will be enough. Take 50 grams flour and wipe clean hands with it, this process is necessary so that mashed potatoes do not stick to the skin of the hands during the formation of zraz. Carefully raise both sides of the tortillas with your hands and close the incision by gently pinching your fingers. We take the resulting little bag in our hands, gently press it with the palms of the hands on both sides, we should get a cylinder with pointed ends. We put the cylinder on the cutting table and slightly press on it with the palm of one of the hands, the approximate thickness of such a cylinder should be 1.5 centimeters. In the same way we form all other zrazy. We take a clean chopping board, sprinkle it with flour. Formed zrazy hands envelop on two sides in flour and lay them on a cutting board.

Step 5: fry the zrazy.

All zrazy are formed and are waiting for frying. Turn on the stove to a strong level and put on it a clean frying pan. Pour 100-150 milliliters of oil to the bottom of the pan. In this step, I want to note that the amount of vegetable oil used is individually for each, during frying, the zrazy absorb a large amount of fat. But the world keeps pace with progress and nowadays there are pans that fry with little or no fat. In my case, it takes about 200 grams vegetable oil. It is very important that the pan is well warmed up, otherwise the zrazy may fall apart during frying and turn into potato porridge. After the oil has warmed up in the pan, we fasten the stove to a medium level and lay the formed zrazy on the bottom of the pan. Fry them until golden brown for 1-2 minutes on both sides, turning them with a wooden spatula, from one side to the other. We put the finished zrazy on a plate, decorate with a sprig of greenery, next we put a sauceboat with sour cream.

Step 6: serve potato zrazy with mushrooms.
