Cooking fudge from berries and eggs:

Step 1: prepare the berries.

First, prepare the berries. We take 400 grams of strawberries, clean it from the stalks and rinse under running water. Then we put the strawberries in a bowl and knead it with a crush. From a gauze we cut a piece of 60 by 60 centimeters and fold the gauze fabric in half. Using a tablespoon, put strawberry puree on its middle and combine all the edges of the gauze, we get a bag. Now, with clean hands, squeeze the strawberry juice through cheesecloth into a deep bowl, squeeze it to the side chapel so that not a drop of juice is lost. Add 200 grams of sugar to the squeezed juice and mix the ingredients with a tablespoon until the sugar is completely dissolved. Strawberry pulp set aside, it can be used in any other dish, for example, you can cook mousse, jelly and many other goodies. After the sugar has dissolved in the juice, the first stage of preparation is completed and it is time to proceed to the second.

Step 2: beat the whites.

Take 8 chicken eggs, chop them with a knife and separate the squirrel from the yolk directly into a deep bowl. We remove the yolk to the side, we won’t need it, you can make strawberries from it, like with pulp, whatever else is tasty. Add to a bowl of squirrels 50 grams of powdered sugar and beat the ingredients with a mixer until a lush white foam is formed. Egg whites should be beaten so that during turning the pan upside down, they do not fall out of it. Therefore, the whipping time of proteins is unlimited and for each it is individual, since the power of the mixers is different for everyone. Estimated whipping time 30 minutes. While the eggs are beating, turn on the oven and heat it up to 120 degrees.

Step 3: combine all the ingredients and bake.

We take strawberry juice mixed with sugar and pour it into a bowl with prepared egg whites whipped in white foam. Turn on the blender again and beat all the ingredients together for 10 minutes until a homogeneous mass is formed. We take a non-stick baking sheet, grease it with 50 grams of butter and pour fruit and protein mass on it. Put the baking sheet in the preheated oven and bake the fondant for 10 to 15 minutes. When its surface becomes rosy, then it is time to pull it out of the oven. Cool the finished fondant right in the pan, cut into arbitrary pieces, sprinkle with icing sugar and put in a clean sterile jar, which we cover with a clean plastic lid. We put the jar with the finished fondant in the refrigerator. If you want to keep the fondant for a longer period, put the pieces in a bag. Then put it in a small container, wrap it with foil and put it in the freezer.

Step 4: serve the fondant of berries and eggs.

Fudge of berries is served on a plate sprinkled with powdered sugar, sprinkled with any fruit or chocolate sauces, with two or three sauces at the same time. Fresh or thawed fruits are placed on top.
