Cooking eggplant with pepper:

Step 1: Prepare the ingredients.

I always inspect any vegetables before buying so that they are fresh, and I do not have to blush in front of guests or my household. Before cooking, I thoroughly wash the eggplant and dry it on a towel. Then I cut off the tail. Chopped on medium-sized squares. I spread it in a bowl and salt, leave it for 15 minutes so that bitterness leaves the eggplant. I take for cooking this dish usually different color peppers for beauty. I act with sweet pepper, as well as with eggplants: I let my running water dry, then I remove the stalk and seeds from it from the inside. I also cut pepper into cubes. I advise you to wash hot pepper and remove white veins and seeds from it, then it will remain sharp, but there will be no bitterness. Finely chop. Next, you need to peel the garlic and rinse it well with cold water. Slice as small as possible or skip through a garlic squeezer.

Step 2: Fry the ingredients.

Eggplants must be washed well with water and dried. Heat vegetable oil in a pan and fry our eggplant until golden brown. Then put on a sieve to remove excess oil. The next step is to fry sweet pepper to softness and let the oil drain through a sieve.

Step 3: Combine all the ingredients.

Pour eggplant, sweet and hot pepper into a deep bowl and mix gently, then add finely chopped garlic. Put garlic to your liking. If there is no lemon on hand to squeeze lemon juice from it, then any fruit vinegar can be used. Finely chop the dill and put in a bowl. Optionally, you can also add parsley and cilantro. Thoroughly interfere and let’s stand a little longer.

Step 4: Serve the eggplant with pepper.

Before serving, sprinkle with ground walnuts and any dry mixes of spicy seasonings to your taste. Good appetite!

- - Eggplant with pepper can be served both hot and cold.

- - If the eggplant skin is too thick, then it is best to cut it off when they are processed, otherwise when finished it will not only be tough, but give the dish an unpleasant bitterness.
