Cooking cabbage rolls with meat and rice in Ukrainian:

Step 1: prepare the ingredients.

Wash pork and beef, rinse under running water, dry with paper kitchen towels, lay on a cutting board, clean from the hymen, cartilage and veins. Step 2: prepare the stuffing for stuffed cabbage.

Turn on the stove to a medium level, place in a non-frying pan and pour the right amount of vegetable oil into it. Throw half the chopped onion into the preheated fat and fry it until golden brown, periodically stirring it with a kitchen spatula to avoid sticking to the bottom of the pan. It will take you about roasting 7 to 10 minutes the consistency of the onion should be soft, transparent, the cubes should be slightly covered with a golden crust. Transfer the fried onions into a deep bowl with ground meat and add salt to them to the taste with black ground pepper. Stir the ingredients with a tablespoon until smooth and let the forcemeat brew. 10 minutes. Then add long-grained rice to the resulting mass of semi-boiled. Step 3: prepare the cabbage.

While the meat is infused, take the washed head of cabbage, put it in a deep pan, fill it with water so that it does not reach the level of the trimmed stump on 2 to 3 fingers and pull out the cabbage, letting the water drain back into the pan. Thus, you measure the amount of water you need. Put the pot with the remaining water on the stove, which is turned on to a strong level, bring to a boil and again dip the cabbage into it. Then boil the cabbage in boiling water for 15 - 17 minutes. Remove the cabbage from boiling water and transfer it to a deep bowl with a fork and slotted spoon. Let the head of cabbage cool and take it apart into leaves. From each cabbage leaf, cut off the stiff central part.

Step 4: forming cabbage rolls.

Remove the minced meat from the refrigerator. Place a cabbage leaf on a cutting board and put a couple tablespoons of minced meat on the edge of the leaf stalk. Wrap the minced meat so that it is completely covered with one side of the cabbage leaf. Then bend inward the right side of the sheet. Following the left side of the sheet. Roll forward into a roll. And slightly press down the cabbage roll with your fingers. In the same way, form the remaining cabbage rolls. Lay stuffed cabbage in a deep cauldron.

Step 5: prepare a dressing for stuffed cabbage.
