Cooking a festive liver cake:

Step 1: prepare the onion.

With a knife, peel the onion from the husk and rinse it well under running water. Then, using a sharp inventory on a cutting board, cut our ingredient in half rings and transfer it to a free plate.

Step 2: prepare the carrots.

Using a knife, peel the carrots and peel the root well under running water. Using an average grater, we rub our ingredient on carrot chips and transfer to a free plate.

Step 3: prepare the carrot and onion filling.

Pour vegetable oil into the pan and put the container on medium heat. After the oil has warmed up, transfer it to the container with the help of a tablespoon of half an onion ring, and constantly stirring our ingredient with the same tableware, simmer it for 5-8 minutesuntil the onion gains a slightly golden color. After that, put the chopped carrots in the pan and, continuing to mix the two ingredients well with a tablespoon, simmer them until the carrots are soft. After that, turn off the fire, and shift the carrot and onion filling from the pan with a spoon into a free plate.

Step 4: prepare the hepatic fluid mass.

We spread the chicken liver on a cutting board and with the help of a knife we ​​clean it of fat and connective tissue. Then cut our ingredient into small pieces. And now, we rinse the component under running water and put it in a sieve so that excess liquid from the hepatic component of the glass. After that, we shift the liver pieces into the blender's container and add the necessary amount of milk here. We cover the appliance bowl with a lid and grind two ingredients at medium speed until smooth. Pour the resulting liquid mass into a bowl. Using a knife, break the eggs and pour them into the same container. Using a hand whisk, mix our ingredients well until a smooth consistency, and then add two tablespoons of vegetable oil and salt to taste. Still mix well and gradually add flour to our ingredients in the container, while not forgetting to constantly mix the liquid mass with a hand whisk so that the flour does not come in clumps. The consistency of the liver mass should not be very thick, as on pancakes. Attention: if the liver dough turned out a little thick, then add some milk to it.

Step 5: prepare the liver pancakes.

For the preparation of liver pancakes, it is best to use a pan with a diameter of 10-11 centimeters. We put the pan on a strong fire and heat it well without oil. When the container is hot, we fasten the fire to medium and pour a little vegetable oil on the bottom of the container. Attention: lubricating the pan with oil is necessary only for the first tortilla, as the rest will be fried in oil, which is in the liver dough. Using the ladle, we collect the liquid mass from the bowl and pour it into the container. Circular rotations of the pan distribute the poured liver dough with a thin even layer over the entire surface of the container. First, fry the liver pancake on one side for 5-7 minutes until golden brown. Then, holding the pancake from below with a wooden spatula, quickly turn it over to the other side and fry it on this side as well until a golden crust forms. So we continue to fry the remaining cakes, until we use up the whole liver mass. We spread the liver pancakes on top of each other in a free plate.

Step 6: prepare the mayonnaise-garlic dressing.

First, pour the mayonnaise on the plate. Then, put the garlic cloves on a cutting board and, crushing them with the handle of a knife, remove the husk from our ingredient. Using the garlic, grind the cloves directly above the plate with mayonnaise. And now, slightly salting the dressing to taste, with the help of a tablespoon, thoroughly mix the ingredients to a homogeneous mass.

Step 7: prepare the greens.

We take parsley and dill and wash the ingredients under running water. Then put the greens on a paper towel, getting rid of the water. Using a knife, finely grind our ingredients and pour them into a plate with mayonnaise-garlic dressing.

Step 8: prepare a festive liver cake.

When the liver cakes have cooled, you can begin to prepare a festive liver cake. Put one pancake on a wide dish. Using a tablespoon, spread the mayonnaise-garlic dressing with chopped herbs in the middle of the tortilla and evenly distribute it over the entire surface of the pancake. Then spread the carrot-onion filling on top of the dressing and also distribute it evenly over the entire surface of the dressing. The following liver cakes are also alternately greased first with dressing and then with filling and spread on top of each other. As a result, we get a liver cake. Do not forget to brush the sides of the dish with mayonnaise-garlic dressing with herbs. The cake must be infused. To do this, cover our finished dish with food foil and put it in the refrigerator for several hours.

Step 9: serve the holiday liver cake.

Before serving, we take out the dish from the refrigerator and remove the foil from it. We cut the liver cake into identical pieces so that everyone can take the tidbit that looks at him. Good appetite!

- - From above, our cake can be decorated according to your wishes with sprigs of greens, grated yolk of a boiled egg or slices of fresh tomato.

- - In addition to the vegetable filling, champignons can be added to the dish. If one layer of the cake will consist of fried mushrooms, believe me - it will not spoil the taste of our dish, but only on the contrary make the festive liver cake more refined in taste and aroma.

- - You can use any liver to make a cake. The taste of the dish will not change from this, but the structure of the liver pancakes will change, however. If you use chicken liver, then the pancake structure will be more uniform. If you use turkey liver, the structure will be fine-grained. And beef liver pancakes are generally coarse-grained.

- - If you are making a cake from beef or pork liver, then before cooking liver pancakes, you need to soak it in milk. From this, the liver will become more tender.
