Making eggplant sandwiches:

Step 1: prepare the eggplant.

We wash the eggplants under running water and put them on a cutting board. Using a kitchen knife, cut our vegetable ingredient across into circles of equal thickness, no more than 5-7 millimeters each and transfer them to a free bowl. Then sprinkle eggplant circles with a small amount of salt and leave them in a container for 20-30 minutesso that bitterness comes out of the vegetable ingredient. After this time, we wash the eggplant rings well under running water and transfer them to a paper towel to completely dry the vegetable from the water. After that, we put the eggplant rings in a free dry bowl.

Step 2: prepare the eggs.

Using a kitchen knife, we break the shell of eggs over a free bowl, and pour the yolk and protein into this container. Add salt to the same container and, using a tablespoon or a hand whisk, mix the two ingredients together, and then beat them until smooth.

Step 3: prepare the ham.

Free the ham from the film and transfer it to a cutting board. Using a kitchen knife, cut the meat delicacy into identical pieces, thick no more than 5 millimeters and transfer to a free plate. Attention: the thickness of the meat ingredient should not exceed the thickness of the eggplant rings.

Step 4: prepare the cheese.

We spread the cheese on a cutting board and with the help of a kitchen knife we also cut it into medium-sized pieces, thick no more than 5 millimeters. Then transfer the cheese slices to a clean plate. Attention: for the preparation of eggplant sandwiches, you need to use hard cheese.

Step 5: prepare eggplant sandwiches.

On a dry surface of the kitchen table, lay out half the eggplant rings. Then, on top of each vegetable circle, lay out cheese slices in one layer, and on top of the cheese ingredient we lay out a cut of ham. Spread cheese and meat ingredients so that their area does not exceed the diameter of the vegetable circles. Then, on top of the meat ingredient, cover with another ring of eggplant. Thus, we get small sandwiches. Before we spread the sandwiches on a baking sheet, prepare it. To do this, cover the bottom of this container with baking paper, and then using a pastry brush evenly lubricate it with vegetable oil. Then, gently holding the sandwich with your hands, completely lower it first into the egg mixture, and then transfer the sandwich into a bowl with breadcrumbs and manually roll our dish well. We do this procedure with all the other sandwiches. We lay the prepared eggplant sandwiches next to it on a baking sheet at a short distance from each other and, using the culinary brush, slightly sprinkle them on top with vegetable oil. Then we put this capacity with the help of kitchen tacks in a preheated oven to a temperature 180 ° C and bake our dish for 20 minutes. After this time, turn off the oven, and take out a baking sheet with ready-made eggplant sandwiches from the oven.

Step 6: serve the eggplant sandwiches.

Using a kitchen metal spatula, carefully transfer the eggplant sandwiches to a wide dish. From above, at your request, sandwiches can be greased with mayonnaise and garnished with chopped dill or parsley. It can be served both hot and cold. Good appetite!
