We put a measure of wheat and 3 measures of boiling water (in this case 1kg of wheat and 3l of water) and at the right heat let it boil, without stirring in the wheat during cooking - just move the pot left-right from time to time - until all the water decreases, then add the sugar (I usually put 280 gr-I don't like sweet ff) and boil until the juice that forms as a result of diluting the sugar decreases. Set the pot aside and over the boiled wheat put 200 gr ground walnuts in a layer to cover the wheat and leave to cool until the next day. The role of the nut is to draw from the juice that is left in the wheat. The next day, mix the wheat well with the walnuts, raisins, add 2 tablespoons of cocoa, essences to taste and the rest of the nuts (I like to grind the remaining walnuts with a rolling pin and cut into larger pieces.) Powder it to taste. I like it with a layer of cocoa and a cross pattern, then we powder it with powdered sugar..we add the candies and gataaa..we can enjoy enjoying a portion. )

2. After washing it well, I put the barley in a saucepan with a thicker bottom, covered it with 1 liter of water and put it on medium heat.

3. After it started to boil, I added salt and removed the foam formed on the surface twice.

4. I reduced the fire to a minimum and covered the pan with the lid. From time to time, once every 10 minutes, I stirred so that it wouldn't stick to the bottom.

5. I continued boiling until the liquid was absorbed. That lasted about 40-45 minutes. If we pull with a spoon, we can see the bottom of the pan for a few seconds, a sign that there is not much liquid in the pan.

Preparation of the composition

6. I added the sugar, which melted quickly. The composition became more fluid again, as can be seen in the image below. I continued to boil the barley with the sugar for 3 minutes, during which time I stirred continuously. After this time, I stopped the fire. I covered the pan with the lid and let the bark cool well. I left him overnight, but he needs at least 3 hours in a cool place. During this time, the grains that did not do it during boiling will also bloom and will absorb the last drop of liquid.

7. If we prepare unpeeled wheat cage, it should be passed through the mincer after it cools well. 9. I modeled the cage in a cake shape with a diameter of 22 cm, from those with removable walls. First I lined the form with food foil, then I pressed the cage inside it. I then overturned the cage on a plate on which I first placed pieces of baking paper. This way, it will be easy to keep the plate clean after I sprinkle the cage with walnuts. I carefully removed the removable form and food foil. I smoothed the cage with a spatula, repairing the small imperfections.

10. I furrowed the cage with finely ground walnuts everywhere. I insisted on the edges, but also on top, until it was all covered in a uniform layer.

11. For the cross, I drew it on a piece of paper, then I cut out a pattern. I placed the template above the cage, making sure it was right in the middle. I sprinkled a little cocoa (about a teaspoon) through a sieve and carefully lifted the template. All around, I sprinkled small candies and finished the base with half a walnut kernel.

And that's about it! All that remains is to share it with a pure soul in the memory of our loved ones. It's definitely the best cage I've ever eaten, and the friends I gave it to said, in addition to "bogdaproste," that I could quit any job and become a cage. a compliment was wanted).
