Making sweet puffs:

Step 1: Cook the dough.

To start, warm the milk a little in a small saucepan, add fresh yeast and dissolve it, stir regularly. Never allow milk to boil. Therefore, heat it at the very minimum heat. Remove the pan from the heat and add salt and sugar, then eggs and pre-melted margarine. Mix everything well with a whisk. Next, add flour and knead the dough. Then add vegetable oil and knead the dough until it stops sticking to your hands. Place it in a bowl and cover with a clean kitchen towel. Put in a warm place, about two hours. During this time, the dough must be kneaded twice, at least. When the dough comes up, put it on a clean table and roll it into a layer, sprinkling a little flour. Distribute pieces of butter on the surface of the formation, fold it four times in an envelope. Roll out again. Repeat this action 4-5 times.

Step 2: Properly infuse the dough.

Then let the dough rest a bit, put it in a bag and leave it for 40 minutes in the refrigerator. Lightly “rested” dough should be rolled out a couple more times, sprinkled with flour. Then put it in the refrigerator for another 30 minutes. That's it, the yeast puff pastry is done! Now you can bake sweet puffs from it.

Step 3: Bake the puffs.

Preheat the oven to a temperature of 200 degrees. Then roll the dough again, cut it into strips of any size you like. Moisten a baking sheet with cold water, gently lay slices of dough on it. Place them not too close to each other, as the dough will rise great during baking. Grease the puffs with a slightly beaten egg yolk. Place the puff baking sheet first in the refrigerator for 10 minutes, then immediately send it to the hot oven. This simple maneuver will allow you to achieve splendor and a better separation of the test into layers. Bake for about 10-20 minutes.

Step 4: Serve the sweet puffs.

Cool the puffs and serve with tea or coffee. You can sprinkle them with a little icing sugar. A well-cooked puff pastry turns out to be airy, crispy. Good appetite!
